Zucchini Casserol
2 medium zucchini; unskinned sliced in 1/4 inch rounds
1 green pepper; sliced
1 onion; cut into rings
2 tomatoes; sliced
1/4 tsp. oregano
1/4 tsp. basil
Sprinkle garlic powder
salt and pepper`
Directions:
Butter bottom of baking dish and line zucchini on the bottom
Then layer green pepper, onion, and tomatoes
Top with herbs and cheese
Bake 350 for 50 minutes
